My sister got a Danish Pancake maker for Christmas so i put it to good use!
These were tasty! I just followed the recipe on the instructions of the machine but subbed the flour for my gf flour mix or rice flour.
It was fun and interesting to cook!

I bought the meringues ready made, they are around Christmas time.
You could fill it with fresh berries and dust with icing sugar too. Or:
I put a spoon of some sorbet i bought from the shops and sprinkled with shredded coconut and chocolate syrup (gluten dairy free kind, i recall the bottle costing 8 bucks but there are many cheaper alternatives that taste quite as good)
Or for some ice magic action melt some cooking chocolate and pour on top!
