That Quinoa bread didn't work because i under cooked it and it collapsed, or i had too much starch, or something

so i cut it up and my dad made a bread pudding out of it.

It tasted fine, just not fluffy as it collapsed, and was kind of raw....lol.

This tastes Ok, not great, so i probably won't bother with ingredients. i think the bread, if cooked well, would be REALLY tasty!

I know i know, it looks gross....but it tastes nice!

Vanilla icing paste (i found it in a jar!)*
4 chocolate cubes (gfcf)
chocolate syrup
Added icing sugar
vanilla syrup
(to make it naughty add a splash of alcohol- i like baitz creme de cacao!)

Nuke and mix. Because of the chocolate it gets solid after a while and you will have to re-nuke to use! :)

* the ingredients were glucose, sugar and vanilla flavour, so i suppose you could supplement this with just vanilla extract and the icing sugar is already in the recipe so just add enough for consistency. :)

Cappuccino Brownie

I made this but will tweak, so here is the tweaked recipe
1/2c sweet/glutinous rice flour or corn flour
1/2c Sorghum
1/2c Cocoa
1/2 tsp salt
1 tsp Xanthan
1/2 tsp Baking Powder
1 tsp cinnamon
1 tsp vanilla icing paste
1 tbsp vanilla syrup
2 tbsp honey


Heat 1/3 cup coconut milk and add 1 tsp coffee, or 2.
beat 2 eggs with 1/2c macadamia oil and 1 1/2c packed brown sugar
Add the milk to this, and then toss with dry ingredients and stir with a fork.
Add 3 rows dark compound gfcf choc chocolate (cut into chip size or grate, i like cutting because u get chunks of chocolate.

Press into a tin
Dust cinnamon, drinking chocolate and gfcf "ants" on top.
Cook at 180 for about 30 minutes but i suggest looking at 10 minutes and there after every 5 minutes. Depending on the container you cook it in and how high and the altitude, etc etc...

Freeze portions :)
Heat up and top with my special chocolate sauce.

Sushi

This is a gluten Free Dairy Free TREAT!
If you're into Asian Cuisine that is...

Put anything you like inside it!

Chose a "meat" like, salmon, chicken teriyaki, tuna, or anchovie...

Then add any of the following:
semi dried tomato, green olives, kalmata olives, avocado, perino tomatoes, grated carrot, gerkins, lettuce, ...
(not all in the same sushi roll!)

And enjoy!



serve with a squirt of lemon juice and GF soy sauce!

Boil Arborio rice slowly adding water.
Add mushrooms
Add chopped parsely
Add chopped cashews
Add chopped soy cheese
Add cubed bacon (i didn't for this meal i kept it vego!)

rice noodles ( i used the purple pack can't recall the brand...)
snap/snow/sweet peas
carrot
red capsicum
blue berries
chicken
peanut butter
mushrooms
Soy Sauce (gf)

there might be some carrot in there.

Omit the blueberries if you aren't open to the different sweet/savory mix.



Oil pan, fry chicken cubes and sliced bacon.

Onion ??? Would be nice, you can add it if you aren't sensitive to fructose.

Add chopped mushrooms.

Add Carrot if you want- i didn't, Add tasty red capsicum (or none).

Put rice noodles in hot water and nuke for a minute or 2. Chop noodles into hand-able short strips or else they turn into a knotty un-servable mess.

Lastly some snap peas snapped in half. Oregano and salt and peanut butter to taste.

I added blueberries but they were confusing to taste in it, so sans the blueberries!

You can add cashew nuts instead.

Some brands of chips (these are CCs or the homebrand) have no Gluten or dairy!!!

I used to get a reaction from corn but it randomly vanished, so i will be eating these heaps, thanks! The Sauce also doesn't have allergens depending on brand and flavour- just double check!
I love sales...i think i got the jars for half price so i got 3! :)
(but mind you i didn't finish them and threw half of it out)
Also, Tacos are GFCF too! :)

Sauce...CC corn chips...and Cheese sauce and herbs.
Pour dorito sauce on the nachos and the cheese sauce on top!

Purple Smoothie
Blue Berries (half cup or handful)
Banana
Half an avocado
Enough almond milk

Blend and drink!

Melted Cheese Sauce


Tastes and looks like melted cheese but it is not, use on pizzas!

Melt about a tablespoon of margarine with 2 tablespoons of rice flour to make a paste. Add rice milk gradually and simmer on low heat to make a thick paste. Optional- add grated soy cheese for an even cheesier taste and stringier consistency or a teaspoon of Nutritional Yeast Flakes (good for you too! Esp Vegans and celiacs). Add salt and chives (if that's your thing)

Glop on and kinda mash it around for even coverage. It should be like a thick potato mash consistency.

Add over vegies, meat/fish/chicken or potato. Also good for pizza topping! Put in a bag, cut a tiny hole, so you can drizzle it on in a # pattern so it looks more like cheese and is spread evenly.


Alternatively shred frozen soy cheese to get even distribution instead of cutting into cubes!

Boil sushi rice with special sushi rice vinegar.
Let it cool.
Spread over matt side of nori, leave an inch gap at the end.
Stuff with filling.
paint water on end bit.
ROLL

Slice!


Stuffing:

Sweet n Soft Choc Chip Cookies

These cookies LOOK great, are a bit soft for a cookie (imo, i like em with crunch) and wayyy too sweet! (even for me!) So i think next time i'll add more starches for crunch, and less sweet things so that it tastes a bit less like a cavity in the making!



3/4 buckwheat
1/2 sorgum
1/2 potato starch
1/4c corn starch
1tsp Xanthan Gum
1/2 tsp sea salt
2tsp Baking Powder


1/2c grape seed oil
1 1/2c brown sugar
1tbsp vanilla extract
2tbsp honey
5-6 tbsp milk
1 egg
1/4 c choc chips



Combine. Chill in the fridge for an hour. bake for 12-15 minutes in 200 degree oven.

These tasted delish! BUT mind you, they were probably overly sweet. I think that these are too soft, next time I'll add more starches to make them crispier and more cookie like. They weren't bad tasting by any means but I wouldn't sell my soul for one. They were satisfactory, the chewy cookies are nicer and i only played it by eye!

Chewy Muckies

butter and sugar in even proportions.

Combine add millet flour and potato starch 2 eggs, 1tsp Xanthan Gum and a tbsp of honey choc chips, coacoa, drinking chocolate, and vanilla essence for flavour.

Cook for about 20 minutes or so, until you see it crisping on the top (getting browner)


These turned out NICE and moist. The moistest, together-est cookie/muffin hybrid EVER! Bite into these, they will not crumble. They might slightly fall apart, but the honey holds it together with a nice chewy bite! BEAUTIFUL when dipped in milk- keep shape when soggy too! Wont hold so much heaviness though. Wonderfully nice and sweet!
